MARTINI: Described by author H.L. Mencken as ‘the only American invention as perfect as the sonnet’, the iconic gin Martini is arguably the finest of all classic cocktails. Our preferred style is ‘wet’, comprising of two parts gin, one part dry vermouth.

NEGRONI: The Negroni first made a stir in Italy in 1919 and is now internationally recognised as the ultimate pre-dinner cocktail. Reviewed as ‘one of the best Negronis we’ve ever had. Anywhere. Ever.’ by World’s 50 Best Bars, our secret is quality ingredients in perfect balance.

MANHATTAN: As rich and sophisticated as its namesake, The Manhattan is an elegant classic cocktail that dates back to the 1870s. A perfect marriage of spicy American rye and delicate Italian sweet vermouth, the Manhattan is an excellent aperitif or after dinner sipper.

OLD FASHIONED: There are many ways to make this popular spirit-driven classic. Our version is what we call the Old Old Fashioned: no over-dilution, no salad, just great whiskey, bitters and sugar. An excellent night cap to be enjoyed with little interruption.

COFFEE HOUSE: The Coffee House combines coffee liqueur and 100% blue agave Tequila for a spicy riff on a caffeinated classic. This robust and complex cocktail is an Everleigh original and has quickly become a Melbourne cult favourite.
